Berry Muffin in 2 Minutes!
Easiest breakfast ever! 1/4 cup oats, 1 egg, 1 tsp brown sugar, handful blueberries (or any berry), splash of milk, dash cinnamon. Mix it all up. Stick in coffee mug in microwave for 2 minutes. Alex is enjoying one as I type.

Victory Lane in Sonoma
Yesterday was a good day. Clint and the No. 15 team won their first race together as a team and it's the first race win for our sponsor. It is also the first race win with my primary team and sponsor that I have been in attendance for (I missed the Reutimann win in Chicago) since I started working in NASCAR. Overall it was a great race and a great day.

My First House (Hopefully)
Today was a big day in our world. We made an offer and it was accepted in our attempt to buy our first home! It's a two story, three bedroom plus a bonus room, three bathroom house in a great neighborhood in Huntersville, N.C.

Black Bean Hummus
So yummy! Great as a dip or a spread for sandwiches.
1 can black beans, no or low salt, drained
2 Tablespoons water
2 Tablespoons fresh lemon juice
2 Tablespoons of Mrs. Dash no salt seasoning (I love lime/chili flavor)
2 Tablespoons Tahini
2 teaspoons Bragg liquid aminos or low sodium soy sauce
1/2 teaspoon ground cumin
1/2 clove garlic, chopped (I used 2 roasted garlic cloves)
pinch of cayenne pepper, or to taste ( I left it out because of the Mrs. Dash flavor)
pinch paprika, for garnish
Directions:
Blend all ingredients, except paprika, in a food processor or blender.
Process until smooth, scraping down sides as needed.
Add additional seasoning and liquid to taste.
Garnish with paprika.
Serve with raw veggies, or pita chips.

Chicken Kabobs (Delicious, Healthy & Easy!)

- (6-inch) bamboo skewers
- 1/4
- cup finely chopped onion
- 2
- cloves garlic, finely chopped (1 teaspoon)
- 1
- tablespoon chopped fresh parsley
- 1/2
- teaspoon paprika
- 1/2
- teaspoon crushed red pepper flakes
- 1/2
- teaspoon ground cumin
- 1/4
- teaspoon salt
- 1/4
- cup olive oil
- 2
- tablespoons lemon juice
- 1
- package (1 lb) boneless skinless chicken breasts, cut in 32 (1-inch) pieces
- 1
- red or yellow bell pepper, cut into 24 (1-inch) pieces1
- Soak the skewers in water for 30 minutes. In shallow glass or plastic dish or resealable food-storage plastic bag, mix onion, garlic, parsley, paprika, pepper flakes, cumin, salt, 2 tablespoons of the olive oil and lemon juice. Add chicken; turning to coat with marinade. Cover dish or seal bag; refrigerate, turning chicken occasionally, at least 1 hour to marinate.
- 2Heat gas or charcoal grill. Thread chicken and bell pepper pieces on skewers.
- 3Place kabobs on grill over medium heat. Cook 9 to 11 minutes, turning occasionally; brushing with remaining 2 tablespoons oil, until chicken is no longer pink in center.

Our First Step Up for Down Syndrome Walk - June 3
Wow! Alex's family and friends really stepped up. For our first event, team "Alex's Friends" had 22 people join the walk and he raised $3,720!
For his 5th birthday, Alex's wish is to have most walkers of any team for the event. This year, Graham's team had over 70 people join the walk. Alex is sure he can find more than 70 people to walk with him (hint, hint).
Thank you, again, for simply being the awesome families you are. It was a great day. Life is good.
