My favorite July 4th Moment

The last 24 hours in southeast Michigan have been filled with thunder and lightning storm. It is ironic how Grandpa Geno's 1st July 4th in heaven has been filled with "fireworks" in the sky. It makes me think that he is spending this holiday celebrating with a few of his favorite people up in heaven.

As I was driving home from work tonight and watched all the fireworks in the distance, I couldn't help but think of my favorite July 4th memory. The details are far from precise, and I will try to explain it the way I remember it with a * to identify the details that 20* years later are a little fuzzy...

From the way I remember it... I was 8* years old and we were living up at the cottage* for the summer. Everyone* went to Van's Beach* to watch the July 4th fireworks over Lake Michigan. We set up a blanket on the beach and my mom and I laid next to each other and watched an extravagent fireworks display. What I remember most is my mom and I taking turns pointing out our favorite fireworks. It seemed like every firework that went off was better than the last, and it all culmunated in a spectacular finale.

Mom - I am not sure that you remember this particular moment, but for me it was a moment that will last a liftetime. I look forward to Matthew and Alex having the opportunity to share a similar moment with you in an upcoming July 4th.
Happy July 4th!

Key West Grilled Chicken - 3 Thumbs Up from the A Team

Easy to get inexpensively and this particular recipe combines the flavors of fresh lime, zesty soy sauce, garlic and just the right amount of honey to make a fabulous marinade.

3 tablespoons soy sauce
2 Tbs. honey
1 tablespoon vegetable oil

Juice of 1 Lime
1 teaspoon minced garlic
Freshly chopped cilantro 4 skinless, boneless chicken breast halves

*Optional - a spicier version - 1 tbsp sriracha (yum!)

If you want to have grilled breasts, Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.

If you prefer kebabs, as are pictured, cut the chicken into large chunks, skewer onto bamboo sticks that have been soaked in water for 5 minutes, and marinate for at least 30 minutes.

Grill on medium high heat for 6 to 8 minutes on each side, until juices run clear.

Quick Homemade Strawberry Ice Cream

1 handful of fresh frozen strawberries or fresh berries and ice cubes,
1 cup Vanilla Almond Milk
2 tablespoons of Almond or Peanut Butter.
Use blender.

Quick. Easy. Healthy. Yummy!

Enjoy!
